She’s tangy, sweet and ready in 20 minutes (with no vegetables in sight!), so I don’t understand the distain people have for apricot chicken? It could be the jar sauce - I’m the first to admit that not much good can come from any of those serving suggestion jar sauces.
If you’ve only ever had the kangtong version of this dish, I implore you to broaden your horizons and give this 3-ingredient sauce powerhouse a go.
However, if you’re one of those weirdos that includes actual apricots (canned or otherwise), please leave.
